Comment: I had the hardest time finding a madeline sheet in local stores (and I live in the LA area)... so I went online and found this tin... it does the job, but the madelines themselves are very small (bite size)... I was hoping to make ones the size you can get at Starbucks (three bites or so)... every recipe I tried made way too many!!! upwards of 80 madelines... Customer Rating: Summary: jmcgovern Comment: Excellent product! Get 2 pans if you plan on making any since you'll gobble them up faster than you think. The mini-madeleines were adorable, delicious & turned out perfectly. I would recommend using a spray such as 'PAM for Baking' to save yourself the tedious task of buttering & flouring each little shell; the results are just as good, you save time & they clean up in a snap. Wash by hand, don't put the pans in the dishwasher. Five stars for these pans, the larger size are equally good & I bought 2 of those as well. More Reviews Madeleine Sheet This sturdy oven-proof sheet is ideal for baking the golden seashell-shaped tea cake called Madeleine.L 15 1/2" x W 5" x H 3/4" Choosing Appliance -> Convection Ovens Convection ovens allow you to bake more foods (cookies, muffins, etc.) at once with even browning, but without the need to shift and rotate pans. A convection oven is the same as a conventional oven except a fan is installed in the back interior of the oven. The fan is used to blow and force the heat to circulate in the oven and around the food, thus eliminating the need to rotate and shift pans. In reality, though, even with the most expensive convection ovens, you will still need to rotate your foods, because there will always exist still hot spots in the cavity, because the cavity is small. Don't compare home convection ovens with most commercial convection ovens used by bakers and small food manufacturers, because their commercial ovens are much larger than home ovens and commercial ovens don't have any hot spots and therefore, there's no need to shift and rotate pans. Choosing Appliance -> Dishwasher Choose a dishwasher with sturdy compression springs in the door. Also look for tough, lightweight nylon or graphite racks with cushioned tips that protect glassware and cookware. Weimer recommends choosing a model with a rack design that provides the largest, most flexible interior space and is configured for your belongings, including odd-shaped pieces.
