She said it was very helpful and had a lot of ideas she used on the job. Then she quit that job to sell resturant equipment. It pays better. More Reviews This insightful book presents 350 recipes, along with expert reviews of valuable techniques, for creating mouthwatering breads and desserts. The use of volume and metric measurements suit the needs of large operations, small bakeshops, home kitchens, and classrooms. More experienced bakers can find advanced tips about chocolate, confections, and wedding cakes, as well as the CIA's approach to plating and decorating desserts. Hundreds of full-color photographs introduce the baking ingredients, offer step-by-step guidance through important techniques, and feature finished products. Choosing Appliance -> Cooking Pans This is another area where spending money is justified. The best pans combine different metals like aluminum or copper on the outside and stainless steel on the inside. Aluminum and copper are valued for their ability to spread heat evenly over the entire pan, and stainless steel is valued for its non-reactive qualities. Buy pans which are heavy and thick with solid handles that are well fastened to the pot. As with knives, buy the highest quality cooking pans you can afford one at a time, starting with a saute pan and a 3 qt. sauce pan. They will last forever. At some point, a stock pot (which will be especially pricey) should be considered for serious cooking. Choosing Appliance -> Dishwasher Choose a dishwasher with sturdy compression springs in the door. Also look for tough, lightweight nylon or graphite racks with cushioned tips that protect glassware and cookware. Weimer recommends choosing a model with a rack design that provides the largest, most flexible interior space and is configured for your belongings, including odd-shaped pieces. Baking and Pastry: Mastering the Art and Craft Tips How to Maintain Appliance -> Cleaning & Maintenance Oven Never use a scouring pad of any sort to remove stubborn stains or soiled areas, since these pads scratch the finish and any future soiled areas won't clean up as well, especially with the self-cleaning models. When the oven is cool to the touch, place a cloth or sponge, dampened with warm to hot tap water, onto the soiled area and allow it to sit, for about ten minutes or so, to help loosen the soil. |
