But, the actual review is in the 'Equipment Corner' section of the July/August 2005 issue NOT the November/December issue. Customer Rating: Summary: It's a roasting pan, not a skillet!! Comment: Forget the negative reviews! This pan does a fantastic job of roasting. I will be doing a 7 lb. Choice Beef Rib-eye roast for Christmas dinner in it. It deglazes just like any other good SS pan. It is a tad heavy though, so don't expect an aluminum feel to it. Cleanup is just like any other SS pan... use Barkeeper's Friend and it all done and shiny. There may actually be better roasters out there, but that doesn't mean this is not an excellent roaster! And BTW, it costs $199, no matter where you look to buy it. Customer Rating: Summary: Best Roasting Pan EVER Comment: I bought one of these last year to use on Thanksgiving and have been wondering ever since how I had managed to live without one! It by far does the best job of making a turkey that I have ever seen. The turkey recipe I normally use involves brining the turkey and then roasting it, and in this pan it turns out amazing, I have everyone who tries it ask what my secret is, and my secret is this pan. I have also used it to make a delicious pineapple glazed ham and roasted two decently sized chickens at once in it as well. It is by far the best roasting pan I or any of my girlfriends have ever seen. Even my mom was wondering how I made her recipe better than her! If you are in the market for a roasting pan this one is hands down the only choice out there! Customer Rating: Summary: Wouldn't Have Thanksgiving Without It Comment: I stepped up from the black, speckled roasting pans you get at the grocery store. I've had my All Clad pan for a year and purchased it before Cook's Illustrated latest review. I made my best turkey ever. I had to give up my family's traditional overnight roasting recipe, but I think this is better. Crisp skin and I can make gravy in the pan. I've used this pan once and my only problem was that I noticed my drippings were burning, so I added a scant amount of water to the pan. This year, I'll lower the oven temperature slightly. It's a good, heavy pan. When you pull this out of the oven, you feel like you've done something! Easier to clean than my supermarket version. With only one use, I haven't observed any of the warping mentioned in other reviews. I will update my review if warping occurs. Customer Rating: Summary: Excerpt from Cooks Illustrated Comment: The following is copied from a review found in Cooks Illustrated Equipment Corner: During our 1999 rating of roasting pans, we decided that the upright handles, roomy interior, and sturdiness of All-Clad's Stainless Steel Roti ($275) justified its hefty price. Since then, however, we've noticed that our top-rated pan has a tendency to warp slightly on the stovetop while browning roasts or deglazing fond. (The Roti lacks the clad construction-an aluminum core sandwiched between layers of steel-that makes other All-Clad cookware so reliable.) So when we saw that Calphalon's fully clad Contemporary Stainless Roasting Pan features a similar design-and for a mere $100-we brought it in for the challenge. To our delight, the Calphalon did not warp on the stovetop, and its lighter weight made it more responsive to burner adjustments than the All-Clad pan. This new Calphalon roasting pan has everything we want, including a reasonable price. UPDATE: Our July/August Roasting Pan Update highlights Calphalon's Contemporary Stainless Roasting Pan ($100). In the past, this pan has been part of their Tri-Ply stainless line. Until the Tri-Ply Stainless inventory has run out, look for our favorite roaster under either of those Calphalon lines. More Reviews It's kind of like buying your first sofa; purchasing a real roasting pan (tin foil ones from the grocery store don't count) is a marker for adulthood. Don't trust those special occasions and holiday gatherings to inferior cookware. After all you're not just making good food, you're making memories. This superbly crafted roaster comes with a non-stick roasting rack and stainless steel turkey lifters. Now all you need is the bird! 
Choosing Appliance -> Grater In our opinion, the old fashioned box graters work the best since they are sturdy and offer several different grating sizes. Choosing Appliance -> Fridge / Freezers By law manufacturers must disclose the energy efficiency of their appliances, rated A to G. These are usually displayed prominently in showrooms. Useful info -> Dishwashers A concealed heating element reduces the risk of lightweight plastic items such as children's drinking cups melting onto it after becoming dislodged mid-cycle. Limescale build-up is also prevented. Some manufacturers now produce models with the concealed heating element coiled around the water inlet pipe for further energy efficiency. |
