The handles come in handles for all uses. Customer Rating: Summary: The Best Roasting Pan on the Market Comment: I am a serious cook and a die-hard fan of All-Clad products. I was forced to turn to alternative roasting pan manufacturers, like Mauviel, because the competing All-Clad roasting pan is not the standard All-Clad aluminum core sandwiched between layers of steel that makes other All-Clad cookware so reliable. Additionally, many other roasting pans, like some of All-Clad's models, have an indentation around the edges to catch the v-rack base. This indentation makes it more difficult to make gravies as the sauce gathers in this depression. Mauviel's roasting pan is the only roaster that I discovered during my research that does not suffer from either of these problems. The price is high, but this is not an issue if you are a serious cook who is roasting chickens or small to medium turkeys several times a month. You are getting a fabulous roasting pan with an aluminum core sandwiched between layers of 18/10 steel. This results in superb heat conductivity. The construction is very sturdy and I have experience no stove-top warping problems and do not expect any in the future (as noted in a famous Cook's Illustrated article reviewing the slightly larger competing All-Clad model). This roasting pan is top-notch, and even works on induction stoves if you have one. I have had no difficulties cleaning the pan. The pan is also great for presentation- if you are familiar with the All-Clad stainless steel set it looks very much like that and blends in with my set.
