Customer Rating: Summary: It is what it is. Comment: I bought this pan to make Paella in. It does that and does that well. It cleans up real good and the enameled surface looks like it will stand the test of time. It is what it is. Customer Rating: Summary: Good quality for the price Comment: Not much you can expect from a Paella pan. It should cook Paella well, stand up to handling and washing, retain its finish. It does all this just fine. Nice heavy steel construction for good heat conduction but enameled for easy cleanup and without the rust problem of the traditional bare steel pans. Only reason I didn't give it 5 stars is that we use it only sometimes so I have no proof of how it will stand the long haul. It looks like it will make it just fine though. More Reviews Myson's Enameled Steel Paella Pans have a solid carbon steel construction like the polished steel pans, that are then coated with a durable enamel which does not require pre-seasoning and offers easy clean-up. The carbon steel construction promotes the development of the the socarrat, caramelized rice that sticks to the bottom of the pan. The wide base and shallow sides help with the even cooking of the rice, flavor development and absorbstion. These pans are meant to be used on gas stoves, over open flame, or in the oven.
