Choosing Appliance -> Strainers We recommend 2 strainers for every kitchen. The first is a solid stainless steel colander (one big enough to wash a lot of lettuce at once). The second strainer is a fine mesh conical strainer (called a chinois) which is a must for any serious sauce or stock making. A chinois is an expensive purchase, but with care it will last many years. Choosing Appliance -> Ovens Most avid bakers prefer separate, even-heat double electric ovens. If that describes you - and you have the space - be sure one of the ovens is equipped with a broiler that provides at least 3,000 watts of cooking power. Also look for racks that pull all the way out and lock in place for safe, easy access to the oven. On the inside, a dark interior shows less baked-on grime, while a porcelain interior is easier to clean Kitchen tips -> Honey
- If honey crystallizes, place the honey container in a pan or bowl of hot water and let it stand until the honey has melted. Then stir the melted honey until it is smooth.
- To allow honey to slide smoothly from a measuring spoon or cup, coat the measuring device with oil before pouring the honey in it.
