Choosing Appliance -> Ovens
Most avid bakers prefer separate, even-heat double electric ovens. If that describes you - and you have the space - be sure one of the ovens is equipped with a broiler that provides at least 3,000 watts of cooking power. Also look for racks that pull all the way out and lock in place for safe, easy access to the oven. On the inside, a dark interior shows less baked-on grime, while a porcelain interior is easier to clean

The importance of high quality knives can't be stressed enough! Buy the best you can and expect to spend some serious money. It is better to buy a couple of excellent knives and slowly add to your collection rather than buying an entire set of low quality knives. Start with a chef knife and paring knife. You will also want to buy a sharpening steel.
Kitchen tips -> Eggs
- Remove eggs from the refrigerator approximately 15 to 20 minutes before you are going to use them.
- Check the shells of eggs to determine freshness. Fresh eggs have shells that are rough and chalky. Old eggs have shells that are smooth and have lost the chalky appearance. Or, place in cold salt water and if it sinks it is fresh. If it rises to the surface, it is old and should be discarded.
