You will have to experiment with fineness of grind, tamping pressure, timing of the lever in the up position and speed of lowering the lever but the end result is well worth the effort. It's fun to use and I always look forward to my morning double shot. "Now," you say, "why would I buy a machine that makes terrible coffee?" Because the difference between the terrible cup of coffee and the delicious shot is YOU. It's YOUR skill that gets you the great shot. Nothing wrong with feeling good about yourself to start the day. I've had one of these little things for about five years now. I've got my grind down. Got my tamp down. Got my timing down. When the coffee first appears as I pull, I know how hard or soft to press, how fast or how slow. I know what the "mouse's tail" is, what the shot should sound like as it fills the cup, what the color of the crema should be. If you're a Starbucks fan and you prefer West Coast style espresso with lots of milk, there's no need to go here. Hey, there's nothing wrong with West Coast style, but there are easier ways to get there than through this machine. If you're like me and you savor the smoothness, body, sweetness and bouquet of good northern-Italian style espresso, this is the machine for you. The Europiccola is a machine for people with passion, people whose morning coffee borders on a sacrament. And yes, to receive the sacrament, the machine will extract its penance from you on the way. Expecting a great shot first time out? Don't. Expecting a "very good year"? Your first shot will be closer to Goodyear. So begins your journey. I'll confess to having swum upstream from this seemingly impossible little machine to blending and roasting my own espresso beans. So my morning cup may start its journey a day or two ahead of turning La Pavoni on. Worth every second of it. There's nothing that adds to the pleasure of the shot like knowing you did it yourself. Customer Rating: Summary: An espresso machine for perfectionists! Comment: I have owned this machine for over ten years and everyday when I make my morning cappuccino I love it more. You can spend more for a machine that measures the coffee, tamps it, pulls the water through and steams the milk for you, but you can tip the kids behind the counter at Starbucks and they'll do the same thing. Making espresso should be a little art and a little science and this machine an impeccable balance of the two. If you aren't the kind of person who takes joy in mixing the perfect martini, making a risotto that whispers with flavor, or whipping a meringue to impossibly tall peaks, this probably isn't the machine for you. The La Pavoni is for the person who will find tremendous joy in going to the lengths required to make a perfect cappuccino by hand everyday. (And don't bother using anything less than Illy Cafe coffee in it.) It takes a little time to learn the proper grind using a Capresso 560 burr grinder Capresso 560 Infinity Burr Grinder, Black, but once you get the grind right and puck compression right, your latté or espresso will be unrivaled and very consistent. I have had to replace the thermal switch once and seals once in 11 years, using it several servings a day. I fully expect to get another 20 years out of this product, making it an excellent value. First i was very excited even though i knew it'd be a big challenge since i had read all negative and positve reviews. At first, the coffee was pretty good and quite strong. After a few months, the machine's acting weird. When i started to lift up the pump handle, there's too much water. It used to come down slowly and made perfect espresso. it's never been the same. i have to call for the warranty soon. I hate this. it's a waste of time. Choosing Appliance -> Cutting boards There seems to be little difference between hard wood and plastic cutting boards from a safety standpoint, as long as they are properly washed and sanitized after each use. Personally, I like the feel of solid wood. One piece of advice--buy large cutting boards. Don't bother with these tiny boards that everyone seems to have in his or her kitchen. They are not user friendly. Once you get down to serious cutting or chopping, the small boards are always woefully inadequate and downright maddening! Choosing Appliance -> Spatulas Buy a sturdy stainless spatula for general uses and a Teflon spatula for your non-stick pan. In addition, buy a silicon baking spatula for scraping bowls. Silicon is an amazing substance which is heat resistant up to 550 degrees.
