Summary: My new partner in vegetable carnage.
Comment: It's high time to replace my Wusthof set and I no longer live near retailers where I can test-drive these knives prior to purchase; so I decided to order both this knife and an equivalent style from the Shun Ken Onion line to gauge their sharpness, ease of use and their feel in my hand before committing to buy several from either line sight unseen. Well, I haven't unwrapped the Shun yet, but this Global had its debut today with some thick, tough broccoli stalks and I was very impressed. This was a completely different experience from holding (or should I say forcefully grasping) a Wusthof.

I first had to adjust my expectations, and then my actual grip. The metal handle has a substantial (and surprising) amount of traction and I didn't find it at all slippery. It felt well balanced in my hand and I didn't need to apply a lot of pressure in order to control it. In fact, the gentler the grasp I engaged with it, the smoother and more effective was its action. My grip was firm but light, and the formidable blade slid through the tough broccoli as if it were butter. My previous knives required heavy sawing motions and considerable pressure on my part even when the blades were freshly honed and sharpened; which was very fatiguing and frustrating, and made a tiring, time-consuming chore of an otherwise simple task. The lethal blade on this beast is almost frighteningly sharp and effective, but I felt no imminent slippage or danger while holding it; all of its slicing power stayed centered upon the vegetable and safely away from my hand. I should mention that I'm a 5'8" woman with a medium-large-sized hand.

I highly recommend this knife if you do a lot of chopping and need a knife that makes fewer demands on your upper body strength; spend a great deal of time at your computer keyboard and experience any wrist fatigue; or just want to make your prep time in the kitchen a breeze and a pleasure.

The Ken Onion will have its day shortly and I'm eager to try it; but in the meantime, this Global is my new partner in vegetable carnage.

Summary: Best knife ever...
Comment: My husband is a pretty good amateur chef which I highly encourage. I bought him this knife for Christmas and he loves it so much he is looking for excuses to chop up vegetables! We have never eaten better.
I am going to buy several more sizes so he will have a complete set.
He goes on and on about how great it is and how it feels so natural, slices so thinly and accurately, etc...

Comment: there's not much to be said about this knfie that hasn't already been said except maybe its sharpening. Global knives, unlike german knives, have a convex edge. German/euro knives have a 'V' shaped edge, for comparison.

The convex edge cuts very well, as you might have experienced, and it last a VERY LONG time. Sharpening convex edges requires a different action/angle than 'V' edges. Common pull-through sharpeners are designed to put a 'V' shaped edge on knives and if you use one on your global you will trash the edge. Unless you use it until you obliterate the convex edge and put a 'V' edge on your global.
Global recommends against using a sharpening steel, not because of the edge, because of the material. Instead they recommend using a whetstone. Now, most people are not going to buy a whetstone and spend considerable time learning to properly use one. BTW the clips global sells to help you maintain the right angle while using a stone suck, and scratch up your knife.
Fortunately, global sells a pull through sharpener specifically designed for their knives called the minosharp.. Unfortunately, it cost $45. Fortunately it works very well.
I use a whetstone for my knives and other tools, and I can put the same edge on my global as the minosharp but it takes me 15 minutes instead of 45 seconds. After trying a friend's minosharp I had to buy one because it puts a factory edge back on my favorite knife in no time.

Summary: A very insane knife!
Comment: I have 3 Global knives. They are the best knives I have ever used. I love that they are 1 single piece of steel (except for the sand inside the handle). I really love this on in particular. It is light, has a great feel, fun to use and ridiculously sharp! I was gently wiping some water off of it with my thumb one day, and the blade slid against my thumb leaving a nice gash about 1/8" thick. Lucky it was at an angle and not perpendicular with my thumb, otherwise I would have bled a lot more. I highly recommend buying any Global knife, and this one is smaller and perfect for most chopping and cutting needs.

Choosing Appliance -> Baking sheete
Not too much romance here, but essential for any functional kitchen. Buy the heaviest pans possible. Also, you should consider buying a non-stick silicon sheet: they make baking very easy!
Choosing Appliance -> Spoons
Buy stainless spoons (both slotted and non-slotted) which are solid and won't bend no matter how tough the job. Also, buy several high quality wooden spoons for stirring delicate dishes like risotto (the sharp edge of a metal spoon would cut or bruise the rice).
