Customer Rating: Summary: Clever design tweaks! Comment: Love this set. The pan -- with either bottom in place -- feels solid. It releases food without a fuss and cleans easily. Although parts fit together tightly enough to prevent leaks, it's nice to have that little bottom groove to catch anything that might slip through. This set is going to be serving me well for years to come. Customer Rating: Summary: In Pursuit of the Perfect Cheesecake (And a Good Bundt) Comment: I haven't made a cheesecake before and went about the preparations methodically. I researched, I reviewed, I shopped. I made a perfectly lovely fancy-schmancy New York style cheesecake with shortbread crust and a home-made caramel topping in this pan and it even slid off the base onto my cake stand perfectly. How about that? It IS non-stick. The buckle is firm. The pan does not leak. It's a good pan. My only concern is that it says it is dishwasher safe. I can see it getting out of round. Also, I slid my cake off - I can see that knives would ruin the surface of the pan. I plan to try the Bundt insert this Xmas. The free silicone stirrer that came with it is handy. It made this transaction a terrific deal! Update 12/28/07: I made a bundt cake for the holidays and it turned out nicely. It wasn't as cute as some dramatic form bundt pans might be but it was just fine. It released easily from the pan which was pleasant. It can be used for bundt cakes as well as flat cakes, like cheese cakes. More Reviews Choosing Appliance -> Strainers We recommend 2 strainers for every kitchen. The first is a solid stainless steel colander (one big enough to wash a lot of lettuce at once). The second strainer is a fine mesh conical strainer (called a chinois) which is a must for any serious sauce or stock making. A chinois is an expensive purchase, but with care it will last many years. Choosing Appliance -> Built-in Ovens Ease of cleaning is well worth considering at the outset. Stay clean liners resist dirt build-up but pyrolitic cleaning is the ultimate. It burns off all baked-on debris at 500°C so that all you have to do is sweep out the resulting ash. Look out for ovens with a steam cleaning facility, too, and remember that some ovens have removable inner doors that are easy to clean.
