Customer Rating: Summary: Best Pizza Cooker Ever Comment: This pizza cooker is super heavy but super excellent. It does not give off any oders when heated up and is easy to clean. If you've never cooked on stone before, prepare to be amazed. It's a must for bread baking to develop a nice bottom crust. I also use the stone for baking French fries and other stuff. Just put the pan directly on the stone and your food will be done faster. With use your stone will discolor. This happens with any stone. You also should not wash any stone with soap. Use hot water and a plastic scraper to clean. This is the only All Clad product I have that I can't get the stainless to sparkle like new. I think it's because I left it in the oven so much. The pizza cutter that comes with this is the best I've ever used. Because of its size, this product is great as a bake-and-serve/occasional baking stone. If you bake a ton, I suggest getting a larger stone and just leaving it the oven all the time. Customer Rating: Summary: Perfect Gourmet Pizza Comment: I have made pizza at home for years, tried regular old aluminum cookie sheets, clay pizza stones and now finally this All Clad soapstone. It is far and away superior to any other way of cooking pizza at home. The stainless steel holder provides for easy transport in and out of the oven as everyone clamors to make the next pizza. This is a huge asset as these pizza stones are heavy and unwieldy. The hot stone gives you a crisp bottom and thoroughly cooked crust (ever get a raw in the middle job? Yuck!). Highly recommended. More Reviews The ring within which the pizza stone sits is just that, a ring, so nearly the entire bottom of the stone is exposed to heat. That is of course what makes this pizza stone work so well, yet at the same time be so convenient. Other pizza stones tend to have flimsy holders, or none at all. If you like you can lift the pizza, stone at all, and carry it to the table for serving (just be sure to put a protective pad beneath). Handsome and superemely functional, this set is sure to please the pickiest pizza connoisseur. Choosing Appliance -> Non-stick Pans We recommend having at least 1 high quality non-stick saute pan. It makes cooking eggs and delicate items like fish a breeze. It also cuts down on the amount of fat necessary to effectively saute. The best place to buy such pans is from a restaurant supplier. Choosing Appliance -> Convection Ovens Convection ovens allow you to bake more foods (cookies, muffins, etc.) at once with even browning, but without the need to shift and rotate pans. A convection oven is the same as a conventional oven except a fan is installed in the back interior of the oven. The fan is used to blow and force the heat to circulate in the oven and around the food, thus eliminating the need to rotate and shift pans. In reality, though, even with the most expensive convection ovens, you will still need to rotate your foods, because there will always exist still hot spots in the cavity, because the cavity is small. Don't compare home convection ovens with most commercial convection ovens used by bakers and small food manufacturers, because their commercial ovens are much larger than home ovens and commercial ovens don't have any hot spots and therefore, there's no need to shift and rotate pans.
