Summary: Flawed Design, Cheaply Made
Comment: This pasta machine is very poorly made. It worked great for a month or so and then went downhill fast.

First to fail was the clamp. The plastic handle turned while the screw remained motionless. I have glued it repeatedly with diminishing success.

The gears started skipping on setting #1 (where they are least engaged) leaving metallic debris on the pasta. The gears skip because the rollers are too far apart at one end. They are now out of parallel by almost a full millimeter. This is less a problem for #2 or #3, but for #9 setting the gap is 5X wider on one side than on the other. No matter how you feed it, the pasta will veer over to one side. This a design flaw. The cranked roller attaches to the frame whereas the driven end of the gear-driven roller attaches to the setting knob which attaches (loosely) to the stamped metal cover which attaches imprecisely to the stamped metal frame. There is no way this design can be manufactured with any precision.

I have treated this per instructions, rolling nothing but pasta and wiping it clean with only a dry towel.

The cutting attachment has worked great, but probably won't attach to whatever I buy to replace this unit.

Summary: People now think I am gourmet
Comment: I LOVE this product. It really is a no brainer to use. It takes a few times to get the hang of it, but once you do it is smooth sailing. My trick to to keep it from moving, is put a dish cloth under the atlas, and wrap it underneath the table, and then then put the wrench thingy (No clue what its called) over that. The towel will give it the resistance and friction that it needs to stay in place.

Fresh pasta tastes so much better than boxed pasta. I have been making mine with white spelt flour and its fantastic. ENJOY!

Summary: What a wonderful toy!
Comment: I purchased this machine after a terrible experience with my Kitchenaid pasta attachments. I had no luck producing pasta and ended my experience in tears,not a good way to pursue a favorite hobby. When my Atlas arrived I followed the directions and within an hour I had produced a lovely bowl of fresh spinach pasta which my husband and I promptly ate!!!!! My husband took a turn and he produced a perfect batch on his first attempt. Somtimes simple is exactly what is needed since the price of the Kitchenaid rollers is well over a hundred dollars and the Atlas was a bargin with free shipping as well. I can't say enough good things about the Atlas plus they have a very informative web site. Bellisimo ...J.P.

Summary: Very pleased...
Comment: Since this is my first pasta machine I have no others to compare with. My first result was "OK" and subsequent attempts much better. As a newbie at making pasta I think the machine is great, though the thin spaghetti from the spaghetti cutter is prone to stick some (probably my bad - too moist?) the fettucine/taglatelle cutter works great and sheets for cut shapes like bow-ties are really simple to do. I am happy with my purchase and am having fun with it. Though it involves more work, fresh pasta is great!

Comment: I purchased this pasta machine and wasn't even able to roll 1 sheet before the rollers stopped turning. Upon further inspecttion it doesn't appear to be assembled correctly. I had high hopes for this machine but was sorely dissappointed.

Choosing Appliance -> Ovens
Most avid bakers prefer separate, even-heat double electric ovens. If that describes you - and you have the space - be sure one of the ovens is equipped with a broiler that provides at least 3,000 watts of cooking power. Also look for racks that pull all the way out and lock in place for safe, easy access to the oven. On the inside, a dark interior shows less baked-on grime, while a porcelain interior is easier to clean
Choosing Appliance -> Ladles
Look for ladles that are made of one piece of stainless steel rather than a handle and dome which are spot welded together. With use, spot welded ladles tend to come apart. Buy several differnet sizes.

Tips How to Maintain Appliance -> Stainless Steel Maintenance
Wipe away any acid spills such as from vinegar or grapefruit straight away. Never clean the bowl or draining board with an abrasive cleaner. Instead use liquid detergent in warm water and wipe with a soft cloth to remove water drop marks. Care for stainless steel appliance fascias and cabinet fronts in the same way. If choosing stainless steel cabinets, a 'brushed' surface is less likely to show grease from finger marks.
