Choosing Appliance -> Ovens Most avid bakers prefer separate, even-heat double electric ovens. If that describes you - and you have the space - be sure one of the ovens is equipped with a broiler that provides at least 3,000 watts of cooking power. Also look for racks that pull all the way out and lock in place for safe, easy access to the oven. On the inside, a dark interior shows less baked-on grime, while a porcelain interior is easier to clean Choosing Appliance -> Strainers We recommend 2 strainers for every kitchen. The first is a solid stainless steel colander (one big enough to wash a lot of lettuce at once). The second strainer is a fine mesh conical strainer (called a chinois) which is a must for any serious sauce or stock making. A chinois is an expensive purchase, but with care it will last many years. Tips How to Maintain Appliance -> Heat Rather than cause accidental heat-damage, prevent such damage in the first place:
- Always use a heat protection pad or trivet (with rubber feet) for hot cookware, or leave cookware to cool on the hob first. Never put hot pans, particularly cast iron. Such heat can damage any surface!
- If you must put a hot pan on the base of a sink use a protective sink mat, sponge, or cloth beneath. It is best to leave the utensil to cool slightly first, or put a few inches of cool water in the sink before the pan.
- Avoid pouring boiling liquids directly into sinks without turning on the cold tap as well.
